There is something special about gathering around the family table, eating a meal, and sharing your day. For the past couple of years we have designated a night of the week to do just that. It has grown as the kids have grown, married and the next generation is using the old highchair that's been in the family for years.
Family includes those who have walked along side of us at our best and our worst. Those whom we have grown to love as much as our own flesh and blood. Family dinner even serves those who just need a warm meal and a hug because that is where they are in life.
We call it our "table ministry". We pray that those who eat at our table not only get a full belly, but a full heart as well. We strive to "fill the belly and feed the soul!"

Cheeseburger Casserole
This recipe will feed 8 adults (maybe... it's so good) All measurements are to taste and desirability ( is that a word?) We tweak this recipe to make it gluten free and it works perfectly.
What you will need:
2 small or 1 large bag of Tater Tots (we use gluten free waffle fries, you can also use french fries)
2 lbs Hamburger (from The Country Corner of course)
1 can of Cream of "something" soup ( I like gluten free cream of chicken)
1/4 - 1/2 cup water
Ketchup (also from the Country Corner)
Mustard (yep... you guessed it)
Onion (optional)
Dill Pickles
1 bag Shredded Cheddar Cheese
Follow the instructions and bake the tater tots until crispy.
While the tots are cooking, brown 2 lbs of ground beef. After it is all cooked up, add the can of soup to the ground beef. You will want a creamy mixture, you may need to add a little water. Strive for a creamy but not runny texture.
In a 9x13 casserole or cake pan, dump the yummy, crispy tots in the pan, you might need to sample them, try not to eat to many!. Set your oven to 375 degrees to prep for backing your casserole.
From this point on you will be adding layers, you don't have to mix the layers!
Spread the beef and soup mixture over the top of the tots, covering the tots. Do not mix the soup and the tots or the tots get soggy. No one likes soggy tots!
Stay with me on this next instruction, it's worth it.
Squirt mustard and ketchup all over the beef/soup mixture. Take a spatula and spread the mustard and ketchup over the beef/soup mixture. You don't have to mix them together, just make sure the beef mixture is covered with the mustard and ketchup.
Dice up some dill pickles and sprinkle them over the ketchup/mustard, I love dill pickles so we use about a cup diced.
Do the same with the onion, it all depends on your preference for how much to use.
Top with a very generous amount of you cheddar cheese and put it into your preheated oven for about 20 - 30 minutes or until the cheese is starting to brown and bubble.
Serve with a smile and get ready for the compliments, it's almost better the next day.
